Wood Ear Mushroom with Stir-fried Egg & Colorful Vegetables

Ingredients

* 3 eggs. Beat lightly with salt and pepper
* 1/2package of wood ear mushrooms, soaked in water for 2 hours
* Rinse with salt and drain. Break into smaller pieces (about 1 cup) so that it will mix well with the eggs
* 2 slices of ginger
* 1/2 cup chopped red pepper
* 1/2cup blanched snap peas
* 1/2cup juliennedChinese yam or jicama
* 3 tablespoons Canola oil
* 1 teaspoon Sesame oil
* Salt, sugar, white pepper, soy sauce

 

 

 

 

 

 

Heat 2 tablespoons of canola oil to medium heat. Stir in the eggs. Scramble them for 1-2 minutes on medium heat till done. Remove from pan.

Add 1 tablespoon of oil; add sliced ginger till golden brown, add in wood ear mushroom and other vegetables. Pan fry for 5 minutes. Season with salt, sugar, soy sauce and pepper.

 

 

 

 

 

Add the eggs in by the end with sesame oil.
