Hot and Sour Soup 

Ingredients

* 4-5 cups vegetable broth (cook 1 lb of soy bean sprouts and 1/2 lb carrots for 2 hours)
* 1/2 package tofu, sliced
* 1/2 cup bamboo shoots, sliced
* 1/2 cup soaked wood ear mushrooms, sliced
* 1/2 cup enoki mushrooms
* 3 slices ginger, cut into matchsticks
* 1 carrot, sliced
* Chopped cilantro for garnish
* Salt, pepper, sugar, 2 tablespoon rice vinegar, 1 teaspoon sesame oil
* 2 tablespoons canola oil
* 2 teaspoons cornstarch dissolved in 3 tablespoons water

 

 

 

 

 

Fry ginger until golden brown. Add wood ear mushrooms, carrots, bamboo shoots, and stir fry for 5 minutes.

Add vegetable broth and simmer for another 5 minutes.

 

 

 

 

 

Add tofu, enoki mushrooms, and dissolved cornstarch. At the end, add sesame oil, rice vinegar and cilantro.
