Tofu Curry with Butternut Squash

Ingredients

* 1 cup of cauliflower washed and cut into pieces
* 1/2 of onion
* 1 cup of butternut squash or pumpkin peal and cut into pieces
* 1 cup of asparagus cut into pieces
* 1 cup of sliced mushrooms
* 1/2 cup of sliced carrots
* 1 package of firm tofu, sliced and cut into triangles
* 1 tbsp of curry powder
* 1 tbsp of canola oil
* 2 cups of water
* Salt and sugar to taste

 

 

 

 

 

 

 

 

 

 

Sprinkle tofu with salt.

 

 

 

 

 

 

 

 

 

Heat oil in pan, fry tofu in pan until golden brown, take out and set aside.

 

 

 

Fry the onion until golden brown.

Add curry powder, pumpkin, tofu, water, and cook for 20 minutes on medium.

Add cauliflower, and cook for ten minutes.

Add salt and sugar to taste.

 

 

 

 

 

Add asparagus, mushrooms and cook for 5 minutes and serve.
