Energy Soup: Shiitake Mushroom, Astragalus and Chicken Soup

 

Ingredients

* 1/2 of a whole chicken
* 6 soaked shiitake mushrooms
* 1 carrot, sliced
* 3 to 5 slices of ginger
* 1.5 oz of astragalus (HUANG QI), about 10 pieces
* Salt to taste

 

 

 

 

 

 

 

 

 

Blanch the chicken in boiling water for two to three minutes. Then rinse and drain. Cut in quarters.

 

 

 

 

 

Put all ingredients in slow cooker with 8-10 cups of water. Cook on high for three to four hours. Season with salt.
