Wonton Soup
Ingredients
* 1 lb organic ground pork
* 1/4 lb raw shrimp, peeled, deveined and cut into ? inch pieces
* 6-8 dried shitake mushrooms, soaked for 1 hr, washed and minced
* 1 tb fresh minced ginger
* 1 beaten egg
* salt, white pepper, sugar, soy sauce, rice wine
* 1pkg of wonton wrapper
Broth: Boil a whole chicken with 1 lb pork backbone for 2 hrs with salt, one onion, and 2 carrots.
Mix stuffing ingredients together well. Fill wonton wrappers with ? teaspoon stuffing and seal with water.
Bring plain water to a boil. Cook wonton’s for 8-10 minutes until they float.
Drain and serve in chicken broth. Optional add green vegetable (e.g. baby bok choy) into the soup.
