Shanghai Conngee with Rice & Greens
Ingredients
* 6 soaked (1-2 hrs) shiitake mushrooms, sliced
* 3 slices of fresh ginger, sliced into matchsticks
* 1/4 lb minced pork
* 1 tablespoon soy sauce
* 1tablespoon rice wine
* 2 tablespoons canola oil
* Salt and pepper to taste
* Sliced green vegetables (bok choy, or lettuce)
* 2 cups of cooked leftover rice
* 4 cups of water
Fry mushrooms and ginger in canola oil for five minutes until fragrance is released.
Add minced pork and fry for another 5 minutes with rice wine, soy sauce, salt and pepper.
Add 2 cups of cooked rice and 4 cups of water.
Bring to a boil and simmer for 10-20 minutes. Add sliced vegetables 5 minutes before serving.
