Lettuce Wraps with Shiitake Mushroom & Greens 

 

Ingredients

* 2 large or 3 small carrots – minced
* 1 jicama – peel and minced
* 8 shiitake mushrooms, pre-soaked and minced
* 3 asparagus spears minced
* 3 king oyster mushrooms, minced
* 1 clove garlic, minced
* 3 tablespoons canola oil
* 1 tablespoon soy sauce
* 2 tablespoons hoisin sauce
* sugar, salt and pepper to taste
* 1 tablespoon sesame oil
* 1 head of butter lettuce, separated into leaves

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Mince the vegetables.

 

 

 

 

 

Washed and separated into leaves.

 

 

 

 

 

Peel and mince.

 

 

 

 

 

Fry shiitake mushrooms with garlic and carrots for 3-5 minutes.

 

 

Add jicama and fry for another five minutes.
Add asparagus, king oyster mushrooms and fry for another 2 minutes.
Season with soy sauce, hoisin sauce, salt, sugar and pepper, fry 1 minute.
Add sesame oil at the end.

 

 

 

 

 

Serve wrapped in fresh lettuce leaves.
