Stir-fried Fresh Asparagus with Goji Berries
Ingredients
* 1 lb asparagus, cut into an inch long pieces
* 1 tablespoon Goji berries, soaked in 2 tablespoons rice wine for 1 hour
* 1 tablespoon canola oil
* 1/2 tablespoon minced ginger
* sugar and salt to taste
Heat 1 tablespoon of canola oil. Stir fry ginger on high until it’s golden brown. Add asparagus, salt and sugar. Stir fry for 5-8 minutes. At the end add Goji berries for 2 minutes.
