Buddha’s Delight (Eight Treasures)
Ingredients
* 2 cups chopped napa cabbage
* 1 cup soaked wood ear mushrooms
* 10 jujube dates pitted, sliced
* 5-6 pieces of pan fried tofu
* 1 cup mung bean threads, soaked in water for 15 min
* 1/2 cup lotus seeds, boiled in water for 15-20 min, drain
* 1/4 cup bamboo shoots, sliced
* 3 pieces of sliced ginger, into matchsticks
* 1 sliced carrot
* 1/2 cup snap peas, blanched
* Salt, sugar, soy sauce, sesame oil, canola oil
Heat canola oil. Fry ginger till golden brown. Add napa, wood ear mushrooms and carrots. Stir fry for 5 minutes.
Add tofu, bean threads, lotus seeds, bamboo shoots, jujube dates and 1/2 cup water, salt, sugar, and soy sauce. Cook for another 10-15 minutes.
Add snap peas and sesame oil at the end.
