Old Fire Soup: Ginger, Lamb & Angelica Root Soup 

Ingredients

* 1/2 oz angelica root (dang gui)
* 1 oz ginger, sliced
* 16 oz lamb shank
* 1/2 cup of rice wine
* Salt and pepper to taste

 

 

 

Slice the ginger. Soak dang gui 1/2 cup of rice wine 1 hour.

 

Cut the lamb shank into small pieces. (If you can)

 

 

 

 

 

Blanch lamb shank in boiling water. Drain.

 

 

 

 

 

Cook all together for 3-4 hours with 12 cups of water. Season with salt and pepper.
