Spinach with Ginger
Ingredients
* 1lb spinach, rinse and chop, keep the reddish end parts.
* 1/2 oz ginger – chopped fine
* 2 tb. canola oil
* 1 tb. wolf berries (gou qi zi) soaked in1tb. rice wine for 1/2 hr for garnishing
* 1/4 tsp. of salt
Bring water and salt to a rolling boil.
Add 1tbsp.canola oil and salt.
Blanch spinach for less than one minute, Strain.
Heat 1 tb.canola oil and fry ginger till golden brown.
Garnish on spinach, adding wolf berries.
