Ginger, Sweet Potato & Azuki Bean Congee
Ingredients
* 1 cup rice
* 1/3 cup azuki red beans
* 1 garnet yam, peeled and chopped
* 1/2 oz ginger
Cook all ingredients with 10-15 cups of water for 4 hours in slow cooker.
Serve with side dish of several tasty garnishes, e.g. bamboo in chile oil, mustard green with olive tapenade, hard boiled egg with soy sauce.
