Shanghai Baby Bok Choy & Shiitake Mushroom Mandala

Ingredients

5 baby bok choys
* 8-10 dried shiitake mushrooms
* 3 pieces of ginger sliced into matchsticks
* 1 tablespoon soy sauce
* Pinch of salt, Pinch of sugar
* 2 tablespoons canola oil
* 1/2 tablespoon sesame oil
* 1/2tablespoon cornstarch, dissolved in 2 tablespoons of water for thickening

 

 

 

 

 

 

Wash bok choys and slice in quarters lengthwise.

 

 

 

Bring water to a boil with 1 tablespoon of canola oil and a pinch of salt. Blanch the bok choys for 2-3 minutes. Drain and arrange in a circle on a plate with the white stems out and the green leafy parts in the center, forming a mandala.

 

 

 

Heat 1 tablespoon of canola oil in pan, add mushrooms, soy sauce, sugar, and 1 cup of water that was used to soak the dry shiitake mushrooms. Cook for 6-8 minutes. Add cornstarch and sesame oil at the end.

 

 

 

 

 

 

 

Arrange mushrooms in the center of the bok choy mandala.
